Rainbow Biscuits Recipe (Biskut Pelangi)

Ingredients
250g unsalted butter (softened)
150g icing sugar (sifted)
1 egg yolk
1 tsp vanilla essence
300g plain flour (sifted)
1 tsp baking powder
100g rainbow sprinkles / sugar pearls (nonpareils)

Method
1. Cream butter + sugar until light and fluffy.
2. Add egg yolk + vanilla, mix well.
3. Fold in flour + baking powder gradually until soft dough forms.
4. Roll dough into small balls (marble size).
5. Dip or press the top of each ball into rainbow sprinkles.
6. Arrange on lined baking tray.
7. Bake at 160°C for 15–18 mins until the base is slightly golden (tops stay colourful).
8. Let cool fully before storing in airtight container.
*Don’t overbake , biscuits should stay light, not brown.
*Use colorful sugar pearls for the classic festive look.
*Can press biscuits gently with a fork for pattern
