Basic Mochi Recipe (with red bean filling)
Ingredients:
1 cup glutinous rice flour (Mochiko flour)
¼ cup sugar
1 cup water
Cornstarch or potato starch (for dusting)
Sweet red bean paste (anko) or filling of choice
Steps:
1. Prepare Filling
Roll red bean paste into small balls (~1 tsp each). Keep aside.
2. Mochi Dough
Mix glutinous rice flour, sugar, and water in a microwave-safe bowl.
Cover loosely with plastic wrap and microwave for 1 minute. Stir.
Microwave again for 1–2 minutes until the dough turns sticky and slightly translucent.
3. Shaping
Dust your hands and surface with cornstarch.
Take a small piece of mochi, flatten, place filling in the center, and pinch edges to seal.
Roll gently into a ball.
4. Serve
Best eaten fresh. Can be dusted with matcha powder, cocoa, or coconut flakes.
