Chicken Bun Recipe (12 buns)

Ingredients (Bread Dough)
500g bread flour
60g sugar
10g salt
10g instant yeast
1 egg
250ml warm milk (or water + milk powder)
60g unsalted butter (softened)
Ingredients (Chicken Filling)
250g chicken breast (diced)
1 onion (chopped)
2 cloves garlic (minced)
1 tbsp soy sauce
1 tbsp oyster sauce
1 tsp curry powder (optional)
1 tsp sugar
Salt & pepper to taste
1 tbsp oil

Method
Prepare Filling:
1. Heat oil, sauté onion + garlic until fragrant.
2. Add chicken, cook until white.
3. Add sauces, sugar, curry powder, salt & pepper. Cook until dry. Cool completely

Prepare Dough:
1. Mix flour, sugar, salt, and yeast.
2. Add egg + warm milk, knead until combined.
3. Add butter, knead until smooth and elastic (10–15 mins).
4. Cover, proof for 1 hour until doubled.

Shape Buns:
1. Punch down dough, divide into 12 portions.
2. Flatten each piece, fill with cooled chicken mixture, seal well.
3. Place on tray, proof another 30–40 mins.
4. Brush with egg wash.
Bake at 180°C for 18–20 mins until golden brown.
