Butterscotch Cookies Recipe
Ingredients:
1 cup (125g) all-purpose flour
½ tsp baking powder
¼ tsp baking soda
¼ tsp salt
½ cup (100g) unsalted butter (softened)
½ cup (100g) brown sugar
¼ cup (50g) white sugar
1 egg
1 tsp vanilla extract
1 cup butterscotch chips
Steps:
1. Preheat oven to 175°C and line a baking tray with parchment paper.
2. In a bowl, whisk flour, baking powder, baking soda, and salt.
3. In another bowl, cream butter, brown sugar, and white sugar until fluffy.
4. Beat in egg and vanilla.
5. Add dry ingredients, mix until just combined.
6. Fold in butterscotch chips.
7. Scoop dough (1 tbsp each) onto tray, leaving space between.
8. Bake 10–12 minutes until golden around the edges.
9. Let cool on tray 5 minutes before transferring to a rack.
