Tiramisu Recipe (serves 8)

Ingredients
250g mascarpone cheese
200ml heavy cream (whipping cream)
3 egg yolks
100g caster sugar
1 tsp vanilla essence
200ml strong coffee (cooled, unsweetened)
200g ladyfinger biscuits (savoiardi)
2 tbsp coffee liqueur (optional)
Unsweetened cocoa powder (for dusting)

Method
1. Brew strong coffee, mix with liqueur (if using). Let cool.
2. Whisk egg yolks + sugar over a double boiler for 5 mins until pale and thick. Let cool slightly.
3. Beat in mascarpone cheese until smooth.
4. In another bowl, whip cream + vanilla until soft peaks. Fold gently into mascarpone mixture.
5. Quickly dip ladyfingers into cooled coffee (don’t soak too long).
6. Arrange a layer of dipped ladyfingers in dish.
7. Spread half the mascarpone mixture over.
8. Repeat with another layer of coffee-dipped ladyfingers + cream.
9. Chill in fridge at least 6 hours (overnight best).
10. Dust generously with cocoa powder before serving.
