Soft Gingerbread Cookies Recipe (about 30 pcs)
Ingredients
350g all-purpose flour
1 ½ tsp ground ginger
1 tsp ground cinnamon
½ tsp ground cloves
½ tsp nutmeg (optional)
1 tsp baking soda
Pinch of salt
115g unsalted butter (softened)
100g brown sugar
120g molasses (or golden syrup if not available)
1 egg
1 tsp vanilla extract
Method
1. In a bowl, sift flour, baking soda, spices, and salt.
2. In another bowl, beat butter + brown sugar until creamy.
3. Add egg, vanilla, and molasses → mix well.
4. Gradually fold in dry ingredients → soft dough forms.
5. Wrap in cling film, chill for 1 hour.
6. Roll dough to about ½ cm thickness, cut into shapes (rounds, gingerbread men, stars).
7. Bake at 175°C for 8–10 mins (cookies should be slightly soft in center).
8. Cool on rack; decorate with icing if desired.
