For the chicken: • 2 chicken breasts, cut into bite-sized chunks • ½ cup cornstarch • 2 eggs, beaten • Salt & pepper • Neutral oil for frying
For the sauce: • ¼ cup ketchup • ¼ cup rice vinegar • ¼ cup sugar • 2 tbsp soy sauce • 1 tbsp cornstarch + 2 tbsp water (slurry) • ½ cup pineapple chunks • ½ red bell pepper, chopped • Optional: green onion, sesame seeds

🔥 Instructions: 1. Coat chicken: Season chicken. Dip into egg, then cornstarch. 2. Fry in batches until golden and crispy. Drain on paper towel. 3. Make sauce: In a pan, mix ketchup, vinegar, sugar, soy sauce. Bring to simmer. 4. Add bell pepper and pineapple. Cook 2–3 min. Add cornstarch slurry to thicken. 5. Toss chicken in sauce just before serving so it stays crispy. 6. Top with green onion and sesame seeds if desired. Serve with rice or noodles.
