🐟 Crispy-Skin Pan-Seared Fish with Herbed Pea Mash
Golden, crackly fish skin meets a buttery soft white fish fillet, served over a lemony mash of sweet peas and herbs. It’s fresh, light, and packed with flavor — like something from a bistro, but made in your kitchen.

Ingredients: • 2 white fish fillets (sea bass, cod, or snapper) • Salt & pepper • 1 tbsp olive oil or butter • 1 cup frozen peas • 1 tbsp cream or butter • Zest of ½ lemon • 1 tbsp chopped mint or dill • Lemon wedges (to serve)

Instructions: 1. Make the mash: Boil peas for 2–3 minutes. Drain and blend with butter/cream, lemon zest, herbs, salt & pepper. Set aside. 2. Prep the fish: Pat skin dry. Season both sides with salt and pepper. 3. Sear: Heat oil in a pan over medium-high heat. Cook fish skin-side down for 3–4 minutes (don’t move it!). Flip and cook 1–2 minutes more. 4. Serve: Spread pea mash on a plate, top with fish, add herbs and lemon. Eat immediately.
