Rustic Fruit & Nut Cake 🍰🌰 Moist, rich, and packed with crunchy nuts and dried fruits — the perfect slice for cozy afternoons or holiday tables!
Ingredients: • 1 cup mixed dried fruits (figs, apricots, raisins) • ¾ cup chopped nuts (walnuts, pecans, almonds) • 1 ½ cups all-purpose flour • 1 tsp baking powder • ½ tsp baking soda • ½ tsp cinnamon • ¼ tsp nutmeg • ½ cup brown sugar • 2 eggs • ½ cup vegetable oil • ½ cup buttermilk (or milk with a splash of vinegar) • 1 tsp vanilla extract • Zest of 1 orange
Instructions: 1️⃣ Preheat oven to 350°F (175°C). Line a loaf pan. 2️⃣ Mix dry ingredients: flour, baking powder, baking soda, spices. 3️⃣ In another bowl, whisk sugar, eggs, oil, vanilla, and orange zest. 4️⃣ Stir in the buttermilk, then fold in the dry mix. Add fruits and nuts. 5️⃣ Pour into the pan and bake for 45–50 min. Cool and enjoy!
