Ingredients: • 500g (1 lb) fresh white fish (like corvina or sea bass), diced • ½ red onion, thinly sliced • 1–2 fresh ají limo or chili peppers, finely chopped (optional) • Juice of 8–10 limes (about ¾ cup) • 1 clove garlic, minced • 1 tsp grated fresh ginger • Salt to taste • Fresh cilantro, chopped • 1 small sweet potato, cooked and sliced • ½ cup cooked Peruvian corn (or regular corn)
Instructions: 1️⃣ Rinse onion slices in cold water to reduce sharpness. Set aside. 2️⃣ In a bowl, combine the fish, lime juice, garlic, ginger, chili, and salt.
