Ingredients (Serves 3–4):
For the salmon: • 500 g (1.1 lb) skinless salmon fillet, cut into 1.5-inch cubes • Salt & pepper • ½ tsp paprika • ¼ tsp garlic powder • 1 cup buttermilk • 1 cup all-purpose flour • ½ cup cornstarch • Vegetable oil for frying
For the aioli: • ½ cup mayo • 1 garlic clove, minced • 1 Tbsp lemon juice • ½ tsp Dijon mustard • Salt to taste

Steps: 1️⃣ Season salmon with salt, pepper, paprika & garlic powder. Chill in buttermilk 15 min. 2️⃣ Mix flour & cornstarch. Coat salmon bites, shaking off excess. 3️⃣ Fry in hot oil (350 °F / 175 °C) for 3–4 min until golden and crispy. Drain on paper towel. 4️⃣ Whisk all aioli ingredients. Serve salmon hot with dip.
