    Seared golden chicken breast layered over a glossy reduction of red wine, shallots, and roasted pears. It’s sweet, savory, and deeply aromatic — the kind of dish that feels intimate, elegant, and soul-warming, like something you’d find in a tiny bistro tucked in the hills.



    📝 Ingredients (serves 2):
    • 2 boneless chicken breasts
    • Salt & freshly ground black pepper
    • Olive oil + 1 tbsp butter
    • 1 ripe pear, sliced
    • 1 small shallot, finely chopped
    • ¾ cup dry red wine
    • ½ cup chicken stock
    • 1 tsp balsamic vinegar
    • Fresh thyme or rosemary sprigs (optional)



    🔥 Instructions:
    1. Sear the chicken:
    Season chicken generously. Sear in olive oil until golden on both sides and cooked through. Set aside to rest.
    2. Roast the pear:
    In the same pan, add a touch of butter and brown the pear slices until soft and golden. Remove and reserve.
    3. Make the reduction:
    Sauté shallots in the pan, then deglaze with red wine. Add stock and vinegar. Simmer until thickened and glossy (8–10 min). Season to taste.
    4. Plate it:
    Slice chicken, spoon over wine reduction, add roasted pears. Garnish with fresh thyme or rosemary if desired.
