#Çilbir (Turkish Eggs). Here's a recipe: >>Ingredients: 2 cups plain Greek yogurt (full-fat recommended) 2 cloves garlic, minced 1/4 cup olive oil 4 large eggs 2 tablespoons white vinegar (or lemon juice) Red pepper flakes (Pul Biber, Aleppo pepper, or other) Dried oregano or other herbs (optional) Salt and freshly ground black pepper to taste
>>Instructions: Prepare the Yogurt: In a medium bowl, combine the Greek yogurt with minced garlic, salt, and pepper. Poach the Eggs: Fill a saucepan with about 3 inches of water and bring to a simmer. Add the vinegar (this helps the eggs coagulate). Crack each egg individually into a small bowl or ramekin. Create a gentle swirl in the simmering water, then gently slide each egg into the water. Cook for 3-4 minutes for runny yolks. Remove with a slotted spoon and gently blot on paper towels. Assemble the Dish: Spread the yogurt mixture on the bottom of a shallow bowl or serving plate. Drizzle generously with olive oil. Gently place the poached eggs on top of the yogurt.
Garnish: Sprinkle with red pepper flakes, dried herbs (if using), and a final drizzle of olive oil. Serve immediately with crusty bread for dipping.
