Ingredients (serves 4): 4 Beef Filet Mignon Steaks (approx. 600g total) 2 tbsp Olive Oil Salt and Pepper to taste
Chimichurri Sauce: 1 cup Parsley, packed, chopped ½ cup Cilantro, packed, chopped ¼ cup Olive Oil 2 tbsp Red Wine Vinegar 2 cloves Garlic, minced 1 small Red Chili, finely chopped (optional) Salt and Pepper to taste
Recipe:
Chimichurri: Combine all chimichurri ingredients in a bowl.
Steaks: Pat steaks dry. Season generously with salt and pepper.
Heat olive oil in a pan over medium-high heat. Sear steaks for 3-4 minutes per side for medium-rare. Adjust cooking time as needed.
Rest steaks for 5-10 minutes before topping with chimichurri sauce.
