    Grilled Vegetable Stacks with Tahini Dressing

    1 large eggplant, sliced into 1cm rounds
    2 zucchini, sliced into 1cm rounds
    2 yellow squash, sliced into 1cm rounds
    2 red bell peppers, cored and sliced into 1cm rounds
    2 tbsp olive oil
    Salt and pepper to taste

    Tahini Dressing:
    1/4 cup tahini
    2 tbsp lemon juice
    1 tbsp water
    1 clove garlic, minced
    Salt and pepper to taste
    Fresh parsley, chopped (for garnish)

    Instructions:

    Preheat grill to medium-high heat.

    Brush vegetable slices with olive oil and season with salt and pepper.

    Grill vegetables for 2-3 minutes per side, until tender and slightly charred.

    Whisk together tahini, lemon juice, water, garlic, salt, and pepper until smooth.

    Stack grilled vegetables, alternating colors, on a serving platter.

    Drizzle generously with tahini dressing.

    Garnish with fresh parsley.
