Spinach and Feta Quiche . Ingredients: 1 sheet (230g) ready-made puff pastry 200g fresh spinach, chopped 150g feta cheese, crumbled 4 large eggs 200ml milk or cream 1 small onion, chopped 2 cloves garlic, minced 2 tablespoons olive oil Salt and pepper to taste Nutmeg, a pinch (optional)
Instructions: Preheat oven to 200°C (400°F). Roll out the puff pastry and fit it into a tart pan. Sauté onion and garlic in olive oil until softened. Wilt spinach in the same pan. In a bowl, whisk eggs, milk/cream, salt, pepper, and nutmeg. Spread spinach mixture over the pastry. Sprinkle with feta. Pour egg mixture over the feta. Bake for 30-35 minutes, or until golden brown and set.
