Savory Mini Beef Wellington Bites with Mushroom Duxelles

    Mini Beef Wellingtons(Makes 12)
    * 8 oz mushrooms, chopped
    * 3 tbsp butter
    * 2 shallots, minced
    * 1 tsp thyme
    * ½ tbsp parsley
    * ¼ cup white wine
    * Salt, pepper
    * 1 lb beef tenderloin, sliced (12)
    * 1 tbsp olive oil
    * 12 prosciutto slices
    * 1 puff pastry sheet
    * 1 egg, beaten
    Instructions:
    * Sauté shallots in butter. Add mushrooms, cook until browned. Stir in thyme, parsley, wine; reduce. Season. Cool.
    * Sear beef in oil; season. Cool.
    * Roll pastry, cut 12 squares.
    * Layer prosciutto, duxelles, beef on pastry.
    * Seal pastry, brush with egg.
    * Bake at 400°F (200°C) for 15-20 min.
