Ingredients - 2 cups grated zucchini - ¼ cup crumbled feta cheese - 1 clove garlic, minced - 2 green onions, finely chopped - 2 tbsp fresh parsley, chopped - 1 tbsp fresh mint, chopped (optional) - 1 egg, lightly beaten - Salt and pepper to taste - ½ cup flour - ¼ cup breadcrumbs - Olive oil for frying
Procedure 1. Prepare the zucchini: Grate the zucchini and place it in a colander with a little salt. Let it sit for 30 minutes, then squeeze out excess moisture. 2. Mix the ingredients: In a large bowl, combine the zucchini, feta, garlic, green onions, parsley, mint, egg, salt, and pepper. 3. Form the mixture: Add flour and breadcrumbs gradually until the mixture is firm enough to shape into balls. 4. Shape and fry: Roll the mixture into small balls and dust them lightly with flour. Heat olive oil in a pan and fry the balls until golden brown on all sides. 5. Drain and serve**: Place the fried balls on paper towels to absorb excess oil.
