Strawberry Cake Recipe
Ingredients:
For the cake:
2 cups (250g) all-purpose flour
1 ½ tsp baking powder
½ tsp baking soda
¼ tsp salt
½ cup (115g) unsalted butter, softened
1 cup (200g) sugar
2 large eggs
½ cup (120ml) milk
½ cup (120ml) plain yogurt (or buttermilk)
1 tsp vanilla essence
1 cup (150g) fresh strawberries, finely chopped
For the frosting:
250g cream cheese (softened)
½ cup (115g) butter (softened)
2 cups (250g) icing sugar (sifted)
½ cup strawberry puree (blend fresh strawberries)
Decoration (optional):
Fresh strawberry slices
Mint leaves
Instructions:
1.Prepare cake batter
1. Preheat oven to 175°C (350°F).
2. In a bowl, sift flour, baking powder, baking soda, and salt.
3. In another bowl, beat butter and sugar until light and fluffy.
4. Add eggs one at a time, then add vanilla essence.
5. Mix in yogurt (or buttermilk) and milk.
6. Gradually fold in dry ingredients.
7. Gently fold in the chopped strawberries.
2. Bake
Pour the batter into the pan and bake for 30–35 minutes, or until a toothpick comes out clean.
Cool completely before frosting.
3. Make frosting
1. Beat cream cheese and butter until smooth.
2. Add icing sugar gradually.
3. Mix in strawberry puree until creamy.
4. Assemble
Frost the cooled cake with strawberry frosting.
Decorate with fresh strawberry slices and mint leaves on top.
