Onde-Onde Biscuits Recipe
Ingredients
200g unsalted butter (softened)
80g icing sugar
1 egg yolk
1 tsp pandan paste (or 2 tbsp fresh pandan juice)
200g plain flour (sifted)
50g corn flour
50g desiccated coconut (lightly toasted)
80g gula melaka (finely chopped or grated)
A pinch of salt
Instructions
1. Prepare coconut: Lightly toast the desiccated coconut in a dry pan until fragrant. Let cool.
2. Cream butter & sugar: Beat the butter and icing sugar until light and fluffy.
3. Add flavor: Mix in the egg yolk and pandan paste.
4. Dry ingredients: In another bowl, combine plain flour, corn flour, salt, toasted coconut, and chopped gula melaka.
5. Mix dough: Fold the dry ingredients into the butter mixture until a soft dough forms.
6. Shape: Roll into small balls (about 10g each). Flatten slightly with a fork.
7. Bake: Preheat oven to 170°C. Bake for 15–18 minutes or until edges turn light golden.
8. Cool & store: Let the cookies cool completely before storing in an airtight container.
