Portuguese Egg Tarts Recipe
Ingredients (makes ~12 tarts)
For the pastry (shortcut):
1 sheet frozen puff pastry (thawed)
For the custard filling:
250ml fresh milk
200ml whipping cream
120g sugar
3 egg yolks
2 tbsp plain flour (sifted)
1 tsp vanilla essence
A pinch of salt
Instructions
1. Prepare pastry:
Cut puff pastry into circles and press into tart moulds (about ¾ full height).
Chill in fridge while preparing custard.
2. Make custard:
In a saucepan, heat milk, cream, sugar, and salt until warm (don’t boil).
In a bowl, whisk egg yolks + flour + vanilla.
Slowly pour warm milk mixture into egg mixture while whisking.
Strain mixture to remove lumps.
3. Fill tarts:
Pour custard into prepared pastry shells (about 80% full).
4. Bake:
Preheat oven to 220°C.
Bake for 20–25 minutes until pastry is golden and custard top has caramelized spspots.
5. Cool & serve:
Let cool slightly before removing from moulds. Serve warm.
