* 4 firm, ripe pears, such as Bosc or Anjou
* 4 cups water
* 1 cup granulated sugar
* 1 cinnamon stick
* 1 vanilla bean, split lengthwise (or 1 tsp vanilla extract)
* 4 ounces bittersweet chocolate, chopped
* 1/2 cup heavy cream
Steps
* Prepare the Pears: Peel the pears, leaving the stems intact. If they won't stand up, you can slice a small bit off the bottom.
* Poach the Pears: In a large saucepan, combine water, sugar, cinnamon stick, and vanilla bean. Bring to a simmer, stirring to dissolve the sugar. Carefully place the pears in the simmering liquid. Reduce heat to low, cover, and cook for 20-30 minutes, or until tender when pierced with a knife.
* Make the Chocolate Sauce: While the pears are poaching, gently heat the heavy cream in a small saucepan until it just begins to simmer. Remove from heat and stir in the chopped chocolate until smooth.
* Serve: Remove the pears from the poaching liquid. Place each pear in a bowl and drizzle generously with the warm chocolate sauce. Serve immediately.
