* 1 cup unsalted butter, softened
* ¾ cup granulated sugar
* ¾ cup packed brown sugar
* 2 large eggs

Instructions:
* Prep: Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.
* Wet Ingredients: In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy. Beat in the eggs one at a time, then stir in the vanilla extract.
* Dry Ingredients: In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
* Add-ins: Fold in the chopped pistachios and white chocolate chips.
* Bake: Drop rounded tablespoons of dough onto the prepared baking sheet, about 2 inches apart. Bake for 10-12 minutes, or until the edges are golden brown.
