* Wet Ingredients:
* ½ cup unsalted butter, softened
* 1 cup honey
* 2 large eggs
* 1 cup plain yogurt
* 1 tsp almond extract
* Topping (Optional):
* Sliced almonds
* Powdered sugar
Instructions
* Prepare: Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.
* Mix Dry: In a medium bowl, whisk together the flour, baking soda, and salt.
* Mix Wet: In a separate large bowl, use a mixer to cream the softened butter and honey together until light and fluffy. Beat in the eggs one at a time, then mix in the yogurt and almond extract.
* Combine: Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
* Bake: Pour the batter into the prepared pan. Sprinkle with sliced almonds if desired. Bake for 35-40 minutes, or until a toothpick inserted into the center comes out clean.
* Cool: Let the cake cool in the pan for 10 minutes before inverting onto a wire rack to cool completely. Dust with powdered sugar before serving.
