Crust:
Raw Pecans or Almonds - 1 cup (120 g)
Pitted Medjool Dates - 1 cup (150 g) (about 7 large)
Salt - Pinch
Filling:
Ripe Avocados (peeled and pitted) - 2 medium
Fresh Lime Juice - 1/4 cup (60ml)
Maple Syrup (or other liquid sweetener) - 1/4 cup (60ml) (adjust to taste)
Coconut Oil (melted) - 1 1/2 tablespoons (22.5ml)
Lime Zest - Zest of 1 lime
Optional Garnish - Extra lime zest, toasted coconut flakes
Steps:
* Prepare the Crust: In a food processor, pulse the nuts and salt until they form a coarse meal. Add the pitted dates and process again until the mixture sticks together when pressed.
* Form the Tartlets: Line a standard muffin tin with paper liners or plastic wrap. Divide the crust mixture evenly among 6-8 muffin cups. Press the mixture firmly into the bottom and up the sides of each cup to form small crusts (tartlets).
* Chill Crust: Place the muffin tin in the freezer to set while you prepare the filling (about 15-20 minutes).
* Prepare the Filling: In the food processor (or a high-speed blender), combine the avocado flesh, lime juice, maple syrup, melted coconut oil, and lime zest. Blend until the mixture is perfectly smooth and a vibrant green color. Stop and scrape down the sides as needed.
* Taste and Adjust: Taste the filling. Add maple syrup for sweetness or a bit more lime juice for extra tanginess, blending briefly after any addition.
* Fill and Chill: Remove the crusts from the freezer. Spoon the filling evenly into each tartlet crust.
* Set: Return the tartlets to the freezer for at least 2 hours, or until the filling is firm.
* Serve: Remove from the freezer about 10 minutes before serving for a softer texture. Remove the paper liners (if used), garnish with extra lime zest or toasted coconut, and enjoy chilled.
