Ingredients:
* For the filling:
* 4 cups (500g) mixed berries (fresh or frozen)
* 1/4 cup (50g) granulated sugar
* 1 tbsp lemon juice
* 1 tbsp cornstarch
* For the crumble topping:
* 1 cup (120g) gluten-free all-purpose flour blend
* 1/2 cup (100g) packed brown sugar
* 1/2 cup (113g) unsalted butter, chilled and cubed
* 1/2 cup (50g) rolled oats (ensure they are certified gluten-free)
* 1/2 tsp ground cinnamon
* Pinch of salt
Instructions:
* Preheat your oven to 375°F (190°C).
* In a medium bowl, combine the berries, sugar, lemon juice, and cornstarch. Toss to coat evenly. Pour the mixture into an 8x8 inch baking dish.
* In a separate bowl, combine the gluten-free flour, brown sugar, oats, cinnamon, and salt for the crumble topping.
* Cut in the cold, cubed butter using a pastry blender or your fingertips until the mixture resembles coarse crumbs.
* Sprinkle the crumble topping evenly over the berry filling.
* Bake for 30-35 minutes, or until the topping is golden brown and the fruit filling is bubbly.
* Let it cool slightly before serving. Delicious on its own or with a scoop of vanilla ice cream.
