* Ingredients:
* 1 cup (240g) high-quality chocolate chips or chopped chocolate (semi-sweet or dark works best)
* 1 cup (240g) cold heavy whipping cream
* Instructions:
* Place the chocolate in a heat-safe bowl.
* In a separate saucepan, heat the heavy cream until it just begins to simmer. Do not let it boil.
* Pour the hot cream over the chocolate and let it sit for a few minutes to melt.
* Stir the mixture gently until a smooth, shiny ganache forms. Let it cool for about 5 minutes, but not so long that it starts to harden.
* Using a hand mixer or a whisk, whip the remaining 1 cup of cold heavy cream until soft peaks form.
* Gently fold the whipped cream into the cooled chocolate mixture until it's just combined. Don't overmix, or it will deflate.
* Divide the mousse into serving dishes and refrigerate for at least one hour to set.
