Instructions:
* Crust: Mix crushed pistachios and melted butter. Press the mixture into the bottom of an 8x8-inch pan. Refrigerate for at least 30 minutes.
* Filling: In a large bowl, beat the softened cream cheese and confectioners' sugar until smooth. In a separate bowl, whisk together the instant pistachio pudding mix and cold milk for about 2 minutes until it begins to thicken. Fold the pudding mixture into the cream cheese mixture.
* Assembly: Spread the filling evenly over the chilled crust.
* Topping: Gently spread the whipped topping over the filling. Sprinkle with chopped pistachios.
* Chill: Refrigerate for at least 4 hours, or overnight, before serving.
