* 2 medium oranges
* 6 large eggs
* 250g granulated sugar
* 250g ground almonds
* 1 tsp baking powder
Steps
* Boil the whole oranges in water for about 2 hours until they are very soft. Let them cool.
* Preheat your oven to 180°C (350°F) and grease and line a 20cm (8-inch) cake tin.
* Cut the cooled oranges in half and remove any seeds. Purée the whole oranges (peel and all) in a food processor.
* In a large bowl, whisk the eggs and sugar until pale and fluffy.
* Fold the orange purée, ground almonds, and baking powder into the egg mixture.
* Pour the batter into the prepared tin and bake for about 1 hour, or until a skewer comes out clean.
