Ingredients:
* Crust:
* 250g (8.8 oz) digestive biscuits or graham crackers
* 100g (3.5 oz) unsalted butter, melted
* Filling:
* 450g (16 oz) cream cheese, softened
* 150g (5.3 oz) toffee bits, plus extra for topping
* 100g (3.5 oz) powdered sugar
* 200ml (6.8 fl oz) heavy cream
* Topping (optional):
* Toffee sauce
Steps:
* Crush the biscuits into fine crumbs, then mix with the melted butter. Press this mixture firmly into the bottom of a 20cm (8-inch) springform pan to form the crust. Chill in the refrigerator for at least 30 minutes.
* In a large bowl, beat the cream cheese and powdered sugar until smooth. Gently fold in the toffee bits.
* In a separate bowl, whip the heavy cream until stiff peaks form. Fold the whipped cream into the cream cheese mixture.
* Spoon the filling over the prepared crust and smooth the top. Sprinkle with extra toffee bits and drizzle with toffee sauce if desired.
* Refrigerate for at least 4 hours, or until the cheesecake is firm.
