Florentine Biscuits

Ingredients:
* For the biscuits:
* 50g unsalted butter
* 50g soft brown sugar
* 50g honey
* 100g flaked almonds
* 50g glacé cherries, chopped
* 50g mixed peel
* 2 tbsp plain flour
* For the decoration (optional):
* 100g dark chocolate, melted
Steps:
* Melt the base: Preheat oven to 180°C (350°F). Line a baking sheet with parchment paper. In a saucepan, melt the butter, brown sugar, and honey over a low heat.
* Combine the ingredients: Remove from the heat. Stir in the almonds, cherries, mixed peel, and flour until everything is well coated.
* Shape and bake: Drop small spoonfuls of the mixture onto the prepared baking sheet, leaving plenty of space between each one as they will spread. Bake for 8-10 minutes until golden and lacy.
* Cool and decorate: Let them cool on the baking sheet for a few minutes before carefully transferring to a wire rack to cool completely. Once cool, you can dip the flat side in melted chocolate and let it set.
