Almond Shortbread Cookies
Ingredients
• 1 cup (225g) unsalted butter, softened
• ⅓ cup (40g) powdered sugar
• 1 ¾ cups (210g) all-purpose flour
• ¼ cup (25g) finely ground almonds or almond flour
• ½ tsp vanilla extract
• Pinch of salt
Instructions
1. Preheat oven to 325°F (160°C). Line a baking tray with parchment paper.
2. In a mixing bowl, cream the butter and powdered sugar until light and fluffy.
3. Mix in the vanilla extract and salt.
4. Stir in the flour and ground almonds until the dough comes together.
5. Roll the dough into a log, wrap in plastic wrap, and chill for 30 minutes.
6. Slice into rounds or shape as desired, then place on the baking tray.
7. Bake for 15–18 minutes or until just starting to turn golden at the edges.
8. Let cool completely on a wire rack.
