All you need is
¾ cup softened butter
1 cup packed brown sugar
1½ tsp vanilla extract
2¼ cups all-purpose flour
¼ tsp salt
½ cup coarse sugar (for rolling)
Preheat oven to 350°F (177°C)
Beat butter, sugar, and vanilla until creamy
Mix in flour and salt until dough forms
Shape into two 8" logs
Roll logs in coarse sugar
Wrap and chill for 4+ hours
Slice into cookies and place on baking sheet
Bake 14–16 mins until edges are lightly golden
Cool 5 mins, then transfer to rack
