Crispy Ritz Cracker Chicken
Ingredients
4 boneless, skinless chicken breasts
1 sleeve of Ritz crackers (about 1 1/2 cups crushed)
1 cup buttermilk (or regular milk with 1 tablespoon lemon juice or vinegar added)
1/2 cup grated Parmesan cheese
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon paprika
1 teaspoon salt
1/2 teaspoon black pepper
1/4 teaspoon cayenne pepper (optional, for heat)
1/2 cup melted butter
Instructions
Preheat the Oven: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it.
Prepare the Crackers: Place the Ritz crackers in a zip-top bag and crush them into fine crumbs using a rolling pin or your hands. Alternatively, you can pulse them in a food processor.
Prepare the Chicken:
If the chicken breasts are thick, consider cutting them in half horizontally or pounding them to an even thickness for uniform cooking.
Season the chicken breasts with salt and pepper.
Dip the Chicken:
Pour the buttermilk into a shallow bowl.
In another shallow bowl, mix the crushed Ritz crackers, Parmesan cheese, garlic powder, onion powder, paprika, black pepper, and cayenne pepper (if using).
Dip each chicken breast in the buttermilk, allowing any excess to drip off, then coat it in the cracker mixture, pressing the crumbs onto the chicken to ensure a good coating.
Place on Baking Sheet: Arrange the coated chicken breasts on the prepared baking sheet. Drizzle the melted butter over the top of the chicken for extra crispiness and flavor.
Bake: Bake in the preheated oven for 25-30 minutes or until the chicken is cooked through and the coating is golden brown and crispy. The internal temperature should reach 165°F (75°C).
Serve: Remove from the oven and let the chicken rest for a few minutes before serving. Enjoy with your favorite sides!
