1) Making balloon bread with just two ingredients is surprisingly easy, but a few little tricks can help you get the best puff and texture. Start by combining the flour and Greek yogurt in a large bowl. At first, it might look like a rough mixture, but as you stir, you’ll see it start to come together into a dough. When it’s thick enough, go ahead and knead it with your hands. This part is really satisfying—you’ll feel the dough transform from shaggy to smooth and soft. If it feels sticky, sprinkle on a bit flour, but be careful not to overdo it.

2) Once your dough is nicely smooth and no longer sticky, it’s time to divide it. Cut it into four equal pieces. Each piece is then rolled out into a flat shape—not too thin, but thin enough to puff well. To get perfect rounds, place a bowl or a cutter on top and carefully trim around the edges with a knife.
