Coconut Candy Bites with Chocolate Filling
Ingredients:
• 1 cup halal sweetened condensed milk
• 2 ½ cups shredded coconut
• 1 cup whole cow milk
• 1 tbsp cornstarch
• 1 (packet vanilla sugar (or 1 tsp vanilla (alcohol-free)
• Filling: chocolate chunks or pieces
• Topping: shredded coconut
Directions:
1. In a small pot over low heat, add the milk + cornstarch and stir until the cornstarch dissolves.
2. Add the condensed milk and vanilla, keep stirring.
3. Gradually mix in the coconut until you get a thick, sticky dough.
4. Turn off the heat and let it cool completely.
5. Roll into little balls, pop a piece of chocolate inside, and seal them up.
6. Roll the balls in shredded coconut, and drizzle with chocolate if you want.
7. Place them in mini cupcake liners and chill in the fridge
