🧄 Smoked Gouda & Caramelized Onion Dip
A creamy, savory dip made with rich smoked gouda, golden caramelized onions, and sour cream — baked until hot, bubbly, and deeply flavorful. Serve with crackers, toasted bread, or fresh veggies.

Ingredients (serves 6–8):
• 2 tbsp unsalted butter
• 2 large yellow onions, thinly sliced
• ½ tsp salt
• 1 tsp balsamic vinegar (optional, for depth)
• 1 ½ cups (170g) shredded smoked gouda
• 4 oz (115g) cream cheese, softened
• ½ cup (120ml) sour cream
• ¼ cup (60ml) mayonnaise
• 1 garlic clove, grated
• Salt & pepper, to taste
• Optional: chives or parsley for garnish

Instructions:
1. Caramelize the onions: Melt butter in a skillet over medium-low heat. Add onions and salt. Cook, stirring often, for 30–40 minutes until golden and soft. Add balsamic at the end, if using.
2. Make the dip: In a bowl, mix cream cheese, sour cream, mayo, garlic, and smoked gouda. Stir in caramelized onions. Season with salt and pepper.
3. Bake: Preheat oven to 375°F (190°C). Spread mixture into a small baking dish and bake 20–25 minutes until hot and bubbly.
4. Serve: Garnish with herbs and serve hot with crostini, crackers, or veggies.
