Ingredients (serves 2):
For the sandwich: • 4 slices halloumi cheese (½ inch thick) • 2 brioche buns, lightly toasted • 1 tbsp olive oil or butter (for frying) • Avocado slices (optional)
For the slaw: • 1 cup shredded red cabbage • ½ cup shredded carrots • 2 tbsp Greek yogurt or mayo • 1 tbsp honey • 1 tsp hot sauce or sriracha • Juice of ½ lime • Salt & pepper, to taste

Instructions: 1. Make the slaw: In a bowl, mix yogurt, honey, hot sauce, lime juice, salt, and pepper. Add cabbage and carrots. Toss well and chill while you cook the halloumi. 2. Cook the halloumi: Heat olive oil or butter in a skillet over medium-high. Fry halloumi slices 2–3 minutes per side until golden and crispy. 3. Assemble: Layer avocado (optional), crispy halloumi, and a generous scoop of spicy slaw inside each toasted brioche bun. Serve immediately.
