Ingredients (serves 4): • 12 oz (340g) rigatoni or penne • 2 tbsp olive oil • 1 small yellow onion, chopped • 3 garlic cloves, minced • 1 (12 oz / 340g) jar roasted red peppers, drained • 4 oz (115g) goat cheese • ½ cup (120ml) heavy cream • ¼ tsp red pepper flakes (optional) • Salt & black pepper, to taste • Fresh basil or parsley, for garnish • Grated parmesan (optional)

Instructions: 1. Cook pasta: Bring a pot of salted water to a boil. Cook pasta until al dente. Reserve ½ cup pasta water, then drain. 2. Make the sauce: In a skillet, heat olive oil over medium heat. Sauté onion until soft, 4–5 minutes. Add garlic and cook 1 minute more. Add roasted red peppers and cook another minute. 3. Blend: Transfer the mixture to a blender with goat cheese, cream, red pepper flakes, salt, and black pepper. Blend until smooth. 4. Combine: Return sauce to skillet. Add pasta and toss to coat. Add reserved pasta water as needed for a silky finish. 5. Serve: Plate hot and garnish with herbs and optional parmesan.
