Ingredients (makes 4 burgers):
For the patties: • 2 (15 oz) cans black beans, drained & rinsed • ½ red onion, finely diced • 2 garlic cloves, minced • 1 chipotle pepper in adobo, minced • ½ cup breadcrumbs (or oat flour) • 1 egg (or flax egg for vegan) • 1 tsp cumin • ½ tsp smoked paprika • Salt & pepper, to taste • Olive oil, for cooking
For the lime aioli: • ⅓ cup mayo (or vegan mayo) • Zest & juice of 1 lime • 1 small garlic clove, grated • Salt to taste
Instructions: 1. Make the patties: In a bowl, mash black beans until mostly smooth. Mix in onion, garlic, chipotle, spices, breadcrumbs, and egg. Form into 4 firm patties. Chill 15 minutes to firm up. 2. Cook: Heat a little olive oil in a pan over medium heat. Cook patties 4–5 minutes per side until golden and crispy. 3. Mix the aioli: Stir together mayo, lime juice, zest, garlic, and a pinch of salt. 4. Assemble burgers: Spread lime aioli on buns, layer with black bean patty, avocado, crispy onions, and any extras you like.
