For the crust: • 1 ½ cups (150g) graham cracker crumbs • ¼ cup (50g) brown sugar • 6 tbsp (85g) unsalted butter, melted • Pinch of salt
For the filling: • 2 ripe bananas, sliced • 3 tbsp brown sugar • 2 tbsp unsalted butter (for caramelizing) • 2 cups (480ml) whole milk • ½ cup (100g) granulated sugar • ¼ cup (30g) cornstarch • 4 egg yolks • 1 tsp vanilla extract • Pinch of salt
For the topping: • 1 cup (240ml) heavy cream • 2 tbsp powdered sugar • Salted caramel sauce (store-bought or homemade) • Extra banana slices (optional)

Instructions: 1. Make the crust: Preheat oven to 350°F (175°C). Mix graham crumbs, brown sugar, butter, and salt. Press into a 9-inch pie dish. Bake 10 minutes, let cool. 2. Caramelize bananas: In a skillet, melt butter and brown sugar. Add banana slices, cook 2–3 minutes until golden and sticky. Set aside. 3. Prepare custard: In a saucepan, whisk milk, sugar, cornstarch, and egg yolks over medium heat until thick and bubbly (5–7 minutes). Remove from heat, stir in vanilla and salt. 4. Assemble: Layer caramelized bananas on the crust, pour custard over the top, and smooth. Chill 4 hours or overnight. 5. Top & serve: Whip cream with powdered sugar. Top pie with whipped cream, drizzle with caramel, and garnish with fresh banana slices.
