For the whipped ricotta: • 1 cup (250g) whole milk ricotta • 1 tbsp olive oil • Salt & black pepper, to taste
For the roasted grapes: • 2 cups seedless red grapes • 1 tbsp olive oil • 1 tsp balsamic vinegar • Pinch of salt • A few sprigs of fresh thyme
For serving: • 1 baguette, sliced into ½-inch rounds • Olive oil (for brushing) • Honey (for drizzling) • Extra thyme for garnish

Instructions: 1. Roast the grapes: Preheat oven to 400°F (200°C). Toss grapes with olive oil, balsamic, salt, and thyme. Spread on a parchment-lined tray and roast for 15–20 minutes, until soft and jammy. 2. Whip the ricotta: Blend ricotta, olive oil, salt, and pepper in a food processor until smooth and creamy (about 1–2 minutes). 3. Toast the bread: Lightly brush baguette slices with olive oil and toast in the oven until golden, about 8–10 minutes. 4. Assemble: Spread whipped ricotta on each toast, top with warm roasted grapes, drizzle with honey, and sprinkle with fresh thyme.
