Crispy Fried Mozzarella-Stuffed Plantain Bites with Hot Honey

Ingredients (makes 12 bites):
For the plantain bites: • 2 ripe plantains (yellow with black spots) • 6 oz (170g) mozzarella (cut into ½-inch cubes) • ½ cup (65g) all-purpose flour • 2 eggs, beaten • 1 cup (100g) panko breadcrumbs • Oil for frying • Pinch of salt
For the hot honey: • ⅓ cup honey • 1 tsp red pepper flakes • 1 tsp apple cider vinegar (optional)

Instructions: 1. Prepare the plantains: Cut plantains into 1-inch thick slices. Use a knife to cut a slit halfway through each slice and stuff with a piece of mozzarella. 2. Bread the bites: Dip each stuffed piece into flour, then egg, then panko. Press gently to coat evenly. Chill for 15 minutes. 3. Fry: Heat oil to 350°F (175°C). Fry plantain bites in batches until golden brown and crispy (about 2–3 minutes per side). Drain on paper towels. Sprinkle lightly with salt. 4. Make hot honey: Warm honey in a saucepan with chili flakes and vinegar. Simmer 2–3 minutes, then cool slightly. 5. Serve: Drizzle hot honey over warm fried bites. Serve immediately!
