1. All-purpose flour (2 cups)
2. Salt (1/2 teaspoon)
3. Baking powder (1/4 teaspoon)
4. Ghee or oil (1/4 cup)
5. Curd (yogurt) (1/2 cup)
6. Water (as required)
7. Optional:
• Ajwain seeds
• Pomegranate seeds
• Other spices to taste
For the filling:
1. Potatoes (boiled and mashed)
2. Spices like cumin, coriander, and chili powder.

Method
1-Make Dough . Mix maida, salt, sugar, baking soda, baking powder, curd, oil, in the bowl
2-Add water as needed and knead a soft dough
Cover and rest for 1-2 hours 2. Keep asid
3-Stuff & Cook Kulcha
1. Take a ball of dough and roll it slightly
2. Place 2-3 tbsp stuffing in the center. Seal and gently roll again.
3. Optionally sprinkle sesame seeds or coriander on top
4. Roast on tawa or bake in oven till golden and crisp.
Serve hot with mint chutney, curd, or pickle🥒
