Crispy Caribbean Cod Fish Fritters
Ingredients:
1 lb salted cod fish, soaked and flaked
1 cup all-purpose flour
1/2 cup water (or as needed)
1 small onion, finely chopped
2 cloves garlic, minced
1 small bell pepper, finely chopped
1 Scotch bonnet pepper, finely chopped (optional for heat)
1/4 cup fresh parsley, chopped
1 tsp baking powder
1 tsp black pepper
Oil for frying
Directions:
Begin by soaking the salted cod fish in water for at least 2 hours, changing the water once or twice to remove excess salt. Drain and flake the fish into small pieces.
In a large mixing bowl, combine the flour, baking powder, black pepper, chopped onion, garlic, bell pepper, Scotch bonnet pepper, and parsley.
Add the flaked cod fish to the dry ingredients and mix well.
Gradually add water, stirring until a thick batter forms. The batter should be thick enough to hold its shape when scooped.
Heat oil in a deep frying pan or pot over medium-high heat. Drop spoonfuls of the batter into the hot oil, frying until golden brown and crispy, about 2-3 minutes per side.
Remove the fritters from the oil and drain on paper towels.
Serve hot with your favorite dipping sauce.
