Vegan Pancakes (Fluffy & Golden)
Ingredients

1 cup all-purpose flour

2 tbsp sugar (organic cane sugar or coconut sugar)

2 tsp baking powder

1/8 tsp salt

1 cup non-dairy milk (soy, almond, oat, etc.)

2 tbsp neutral oil (canola, sunflower, or melted coconut oil)

1 tsp vanilla extract

Instructions

Mix Dry Ingredients
In a bowl, whisk together the flour, sugar, baking powder, and salt.

Add Wet Ingredients
Pour in the non-dairy milk, oil, and vanilla. Stir gently until just combined (don’t overmix—some small lumps are fine).

Preheat & Cook
Heat a non-stick pan or griddle over medium heat. Lightly grease if needed.
Pour about ¼ cup of batter per pancake. Cook until bubbles form on top and edges look set (about 2–3 minutes). Flip and cook another 1–2 minutes until golden.

Serve
Stack them high and serve with maple syrup, vegan butter, berries, or your favorite toppings.
