Ingredients:

• 1 cup cornmeal
• 1 cup all-purpose flour
• 1-2 tablespoons sugar (optional, depending on sweetness preference)
• 1/2 teaspoon baking soda
• 1/2 teaspoon baking powder
• 1/4 teaspoon Cajun or Creole seasoning
• 1/4 teaspoon salt
• 1/8 teaspoon fresh ground black pepper
• 1/2 cup milk, room temperature
• 1/2 tablespoon white vinegar
• 2 tablespoons vegetable oil
• 1 large egg, room temperature
• 3 tablespoons grated onion
• Oil for frying (canola, vegetable, or peanut oil)

Instructions:

1. Mix dry ingredients: In a large bowl, whisk together the cornmeal, flour, sugar (if using), baking soda, baking powder, Cajun seasoning, salt, and black pepper.
2. Prepare wet ingredients: In a separate medium bowl, mix the milk and vinegar, allowing it to sit for 5 minutes. Then whisk in the vegetable oil, egg, and grated onion.
3. Combine the mixtures: Add the wet ingredients to the dry ingredients, and stir just until combined. Be careful not to overmix.
4. Heat oil for frying: In a Dutch oven or heavy skillet, heat about 1 1/2 inches of oil to 365°F (185°C).
5. Form and fry the hush puppies: Using two small spoons, scoop out a rounded spoonful of batter with one spoon and gently push it off into the hot oil using the second spoon. Fry for 3-5 minutes, or until golden brown on all sides.
6. Drain and serve: Remove the hush puppies from the oil and drain on paper towels. Serve immediately while still warm.
