1. Hawaiian Banana Bread
Ingredients:
2 ripe bananas, mashed
1 cup crushed pineapple, drained
1/2 cup unsalted butter, melted
1 cup sugar
2 large eggs
1 3/4 cups all-purpose flour
1 tsp baking soda
1 tsp salt
1 cup shredded coconut
1/2 cup chopped macadamia nuts (optional)
1 tsp vanilla extract
Instructions
Preheat oven to 350°F. Grease a 9x5-inch loaf pan or line with parchment paper.
In a large bowl, whisk together mashed bananas, pineapple, melted butter, sugar, eggs, and vanilla until smooth.
In a separate bowl, whisk flour, baking soda, salt, and cinnamon.
Gradually mix the dry ingredients into the wet ingredients. Gently fold in coconut and macadamia nuts.
Pour batter into the loaf pan. Bake for 50-60 minutes, or until a toothpick comes out clean.
Let cool in the pan for 10 minutes, then transfer to a wire rack. Serve warm with butter or honey. Store in an airtight container at room temp for 3 days or in the fridge for a week. Freeze slices for up to 3 months!
2. Banana Nut Bread
Ingredients
3 ripe bananas, mashed (about 1 cup)
1/3 cup melted butter (or neutral oil)
3/4 cup sugar (can reduce to 1/2 cup if you like it less sweet)
1 large egg, beaten
1 tsp vanilla extract
1 tsp baking soda
Pinch of salt
1 1/2 cups all-purpose flour
3/4 cup chopped walnuts or pecans
Instructions
Preheat oven to 350°F (175°C). Grease a 9x5-inch loaf pan.
In a large bowl, mash the bananas until smooth. Stir in the melted butter.
Mix in the sugar, beaten egg, and vanilla.
Sprinkle baking soda and salt over the mixture and stir in.
Add flour and mix gently until just combined (don’t overmix).
Fold in the chopped nuts.
Pour batter into prepared pan and bake 50–60 minutes, or until a toothpick comes out clean.
Let cool in the pan for 10 minutes, then remove and cool completely on a wire rack before slicing.
3. Cream Cheese Banana Bread
Ingredients
For the batter:
1 ½ cups all-purpose flour
1 tsp baking soda
½ tsp salt
½ cup unsalted butter, softened
¾ cup sugar
2 large eggs
1 cup mashed ripe bananas
¼ cup sour cream
1 tsp vanilla extract
For the cream cheese filling:
8 oz (225 g) cream cheese, softened
¼ cup (50 g) sugar
1 large egg
2 tbsp all-purpose flour
Instructions
Prepare the pan & oven. Preheat oven to 350°F (175°C). Grease and line a 9×5-inch loaf pan with parchment paper.
Mix dry ingredients. In a medium bowl, whisk together flour, baking soda, and salt. Set aside.
Make banana batter. In a large bowl, cream butter and sugar until light and fluffy. Beat in eggs one at a time. Mix in mashed bananas, sour cream, and vanilla. Stir in dry ingredients until just combined.
Make cream cheese filling. In another bowl, beat cream cheese, sugar, egg, and flour until smooth and creamy.
Assemble. Pour half of the banana batter into the loaf pan. Spread cream cheese mixture evenly on top. Pour the remaining banana batter over the cream cheese layer and smooth the top.
Bake. Bake 55–65 minutes
4. Double Chocolate Banana Bread
Ingredients
1 cup all-purpose flour
½ cup unsweetened cocoa powder
1 tsp baking soda
½ tsp baking powder
½ tsp salt
½ cup unsalted butter, melted (or neutral oil)
1 cup brown sugar (or white sugar)
2 large eggs
1 tsp vanilla extract
1 cup mashed very ripe bananas (about 2–3 bananas)
½ cup sour cream or Greek yogurt
1 1/2 cup semisweet or dark chocolate chips
Instructions
Preheat oven & prepare pan. Heat oven to 350°F (175°C). Grease and line a 9×5-inch loaf pan with parchment paper.
Mix dry ingredients. In a medium bowl, whisk together flour, cocoa powder, baking soda, baking powder, and salt.
Mix wet ingredients. In a large bowl, whisk melted butter and sugar until smooth. Add eggs and vanilla, mixing well. Stir in mashed bananas and sour cream.
Combine. Gently fold dry ingredients into wet until just combined. Do not overmix. Stir in most of the chocolate chips, reserving a handful for the top.
Bake. Pour batter into prepared pan, smooth the top, and sprinkle with remaining chocolate chips. Bake 55–65 minute
