Red Velvet Marble Loaf
Ingredients:
1 ½ cups (190 g) all-purpose flour
2 tbsp unsweetened cocoa powder
1 tsp baking powder
½ tsp baking soda
¼ tsp salt
½ cup (115 g) unsalted butter, softened
1 cup (200 g) granulated sugar
2 large eggs, room temperature
¾ cup (180 ml) buttermilk
1 tsp vanilla extract
1 tsp white vinegar
1–2 tsp red food coloring (gel preferred)
For the swirl:
½ cup (115 g) cream cheese, softened
¼ cup (50 g) granulated sugar
1 egg yolk
½ tsp vanilla extract
Instructions:
1. Prep the pan
Preheat oven to 350°F (175°C).
Grease and line a 9x5-inch loaf pan with parchment paper.
2. Mix dry ingredients
In a bowl, sift together flour, cocoa powder, baking powder, baking soda, and salt. Set aside.
3. Make the batter
In a large mixing bowl, cream butter and sugar until light and fluffy.
Add eggs one at a time, beating well after each.
Mix in vanilla extract and vinegar.
Alternate adding the dry mixture with buttermilk, beginning and ending with dry ingredients.
Stir in the red food coloring until evenly tinted.
4. Prepare cream cheese swirl
In a small bowl, beat cream cheese, sugar, egg yolk, and vanilla until smooth and creamy.
5. Assemble the marble loaf
Pour half of the red velvet batter into the loaf pan.
Spoon dollops of cream cheese mixture on top.
Add the remaining red velvet batter.
Swirl gently with a skewer or knife for a marble effect (don’t overmix).
6. Bake
Bake for 50–60 minutes, or until a toothpick inserted in the center comes out clean.
If the top browns too quickly, tent with foil during the last 15 minutes.
7. Cool & serve
Allow loaf to cool in the pan for 15 minutes, then transfer to a wire rack to cool completely.
Slice and enjoy as is, or with a dusting of powdered sugar.
