Jhenga masala (Prawns curry )🍛

Ingredients:
1. 500gm prawns
2. 2 tbsp white vinegar
3. 1 glass water
4. 100ml mustard oil
5. 2 big-sized onions
6. 1 tbsp ginger-garlic paste
7. 1 tsp turmeric powder
8. 1 tsp red chilli powder
9. 1/2 tbsp Kashmiri chilli powder
10. 1 tsp cumin powder
11. 1 tsp coriander powder
12. 1 tbsp kashuri methi (fenugreek seeds)
13. 1/2 tbsp salt
14. 4 green chillies
15. 1/2 tsp garam masala powder
16. Chopped coriander leaves

Instructions:
1. Marinate the Prawns: Mix prawns with vinegar, salt, and a bit of turmeric powder. Let it marinate for about 15-30 minutes.
2. Prepare the Masala: Heat mustard oil in a pan. Add kashuri methi and let it sizzle.
3. Sauté Onions: Add sliced onions and sauté until they're golden brown.
4. Add Ginger-Garlic Paste: Add the ginger-garlic paste and saute until the raw smell disappears.
5. Add Spices: Add turmeric powder, red chilli powder, Kashmiri chilli powder, cumin powder, and coriander powder. Mix well.
6. Add Prawns: Add the marinated prawns and mix well with the masala.
7. Cook: Cook until the prawns are done,stirring
occasionally. Add water if the masala becomes too thick.
8. Final Touches: Add garam masala powder, green chillies, and chopped coriander leaves.
Mix well.
9. Serve: Serve hot, garnished with additional coriander leaves if desired.
